Double Chocolate & Coconut Vegan Protein Balls Recipe

These little balls have been an absolute savior during my detox, trying to stay clear of dairy and sugar and all things sweet and nice is tough, so these have been a great little chocolate alternative for a daily snack and quite filling hence the protein. Quick and easy, gluten, sugar and diary free - an easy win. Prep at the weekend so you have them to hand when you get a sweet craving.

Makes 10 Protein Balls
Ingredients:
30 grams chocolate vegan protein powder (I use Arbonne Pea Protein because I love its smooth and creamy texture and all round goodness)
10 grams of raw cacao powder
40 grams desiccated coconut plus extra for rolling in
40 grams almonds / or cashew nuts
Handful of walnuts crunched
50 grams Medjool pitted dates (soaked in water for 5 minutes)
40 grams organic almond butter (or alternative nut butter of your choosing)
Optional: Add a serving of Agave Nectar Syrup from the Good food company or some authentic maple syrup if you prefer your snack quite sweet
Method:
Add the protein powder / cacao powder and almonds to a food processor along with the dates and walnuts and nut butter and combine well
You are aiming for one big blob of sticky type dough
Divide the mixture with your hands into 10 even-ish portions and roll into balls with the palm of your hands
Pour the desiccated coconut shavings onto a clean chopping board and roll through the desiccated coconut until they stick
you can refrigerate the balls but consume withing 7 days
