Quick, Easy & Delicious Homemade Hummus Recipe

This is one of thee most simple yet impressive recipes for creating a homemade dish that you can reproduce for pretty much any occasion time and time again. It is also so versatile you can try with a variety of ingredients so it never gets old.
I mean who doesn't love a good hummus and Crudités .. serve with raw carrot batons, diced cucumber and /or raw peppers as an hors d'oeuvre before any starter or main meal and your guests will be delighted. Trust me.

Total Prep and Bake Time: 5 Minutes
Difficulty: A five year old could execute this recipe with great success.
Serving: Two generous helpings of homemade hummus or one very large bowl of hummus.
You will need a food processor.
Ingredients
For the Hummus:
Two tins of good quality chick peas (800 grams) - I would recommend organic if possible (but not essential)
50 ml of good quality extra virgin olive oil
3 cloves or Garlic
Juice of one medium lemon squeezed
Salt Flakes for seasoning
A pinch of Smoked Paprika
For the topping:
Handful of toasted / roasted pine nuts
Handful of Sultanas
Pinch of Paprika
10 Ml of Extra Virgin Olive Oil
Method
Drain the tins of humus and add to the food processor (I use the blade function if using a magimix processor for blending)
Chop up the garlic cloves and add them in
Add in the 50 Ml extra virgin Olive oil
add in the squeezed lemon juice
Finally add in (as much salt as you like for flavoring) and a pinch of the Paprika and whizz until you have a smooth consistency.
Do a little taste test to ensure it is to your liking. It should be a little salty, Don't put in too much paprika and make sure the zingy taste of the lemon isn't over bearing
If your batch is looking dry you can add more extra Virgin Olive oil but it shouldn't be too runny
Remove the hummus with a spatula from the food processor and place in your serving dishes
drizzle olive oil over the top of the mix (just let it sit on top - it will find its way into the groves
Sprinkle a handful of pine nuts and sultanas onto the top of the mix
lastly add a pinch of paprika with your fingers and sprinkle on for a splash of colour and tadaa you have yourself some freshly made hummus
I like to cover in clingfilm and refrigerate for at least a couple of hours before serving. You can really experiment with this recipe by using red peppers as one of the main ingredients or adding some coriander to the mix. Have a play - get creative !
