Cacao & Gojo Berries Energy Balls Recipe

Truth be told I wasn't sure whether to be horrified or joyful when these turned out (as they have a distinct resemblance to animal poop) but moral of the story here - don't judge a book by its cover. These little energy balls are packed full of goodness and taste just great and a perfect little daily pick me up when you are feeling a crash coming on. Vegan Friendly, Sugar Free and Gluten Free - meal prep these at the start of your week and you wont find yourself reaching for the Chocolate. All hail the cacao and Gojo berry balls!!

Cacao Energy Balls recipe
They taste better than they look - I promise!

Makes 10 Protein Balls

Ingredients:

  • 30 grams of raw cacao powder

  • 200 grams Medjool pitted dates (approx 10 - 15 dates) - Soaked in water for 5 minutes

  • 40 grams dried Gojo berries (20 grams for dusting and 20 grams for the mix)

  • 20 grams desiccated coconut

  • 30 grams of halved walnuts

  • 30 grams of either almond or cashew nuts

  • 40 grams organic nut butter (smooth almond or cashew nut butter tend to work best)


Method:

  • Soak the pitted dates in water for five minutes and drain

  • on a clean chopping Board, grind about half of the dried Gojo berries on a chopping board using a kitchen utensil such as a wooden spoon or mortar to mash. You want to get them into a powder like consistency but chunks are also fine and set to the side

  • Put the other half of the Gojo berries into a food processor along with the soaked dates and walnuts and grind in the mix

  • In a mixing bowl, add in the ground Gojo berry, date & nut mix and add to this the almond butter, cacao powder, desiccated coconut and combine well with your hands (it will be sticky but that is ok) You are aiming for one big blob of sticky type dough - I would recommend using latex or cooking cloves for hygiene

  • divide the mixture with your hands into 10 even-ish portions and roll into balls with the palm of your hands - they should compress quite easily as the mixture is moist with the dates

  • roll the balls through the chopped / bashed / Gojo berries until the powder sticks

  • you can refrigerate the balls in a little container but consume within 7 days
