Easy Baking: Healthy Banana and Pumpkin Seed Bread Recipe

For those of us in a hurry (or not a lot of patience) but keen for homemade healthy snacks, this Banana Bread with Pumpkin seeds recipe is a perfect alternative to breakfast pastries or sugary snacks. You will only need a handful of ingredients, most of which you will most likely have in your food cupboard anyway so no need to schlep to the shops.

Homemade Banana Bread

Total Prep and Bake Time: 75 minutes (approx)

Difficulty: Easy Peasy

Ingredients:

  • Ripe Bananas (3-4)

  • 2 Large Eggs (or three medium) (free range/ organic if you please)

  • 200 grams Wholewheat Flour

  • 1 teaspoon of bicarbonate of soda

  • 1 teaspoon of baking powder

  • 1 teaspoon of ground cinnamon

  • 2 Large tablespoons of Honey or Agave Syrup (depending on how sweet you want it to be but you can be generous with the honey)

  • Half a tall glass of semi skimmed milk - You can also opt for water here although I wouldn't recommend it just from a taste and yumminess perspective) Another alternative to milk of water is a small low fat natural / Greek yogurt add to the mix) I used milk and it turned out great so maybe stick o milk and you can experiment the next time around.

  • A handful of Pumpkin Seeds (I don't measure or weigh so whatever you think yourself)

  • 100 grams (give or take) of melted butter (I use salted butter to add some flavor but you can use unsalted butter if you prefer) An alternative option if you want to keep it extra healthy is use coconut oil (heat it on the pan) instead of butter.

  • Optional: I crunch up walnuts and chuck them into the mix two as they add a nice texture to the beard and great for our fiber intake. Say 5 - 10 Crush walnuts max.

  • Optional: Full disclosure - I threw in some organic coconut sugar just because - like a tablespoon or two but if you were generous enough with the honey then this probably isn't necessary

  • Optional: A dollop of golden syrup added to the mix works wonders

  • Optional: keep some banana aside for decorating


Feel free to improvise with this recipe or switch up the ingredients depending on how healthy you want to be - don't forget we also want to eat it after so keep that in mind before you get rid of all the good stuff!


Method:

  • Pre-heat the oven to 180 degree C (for about 20 - 30 minutes before you but the bread in)

  • Add the wholewheat flour, Baking soda and Baking Powder, Cinnamon and Salt to a large mixing bowl

  • In a separate bowl - mash up the bananas finely

  • Beat the eggs then add them to the bowl with the mashed bananas

  • Add in your Honey / Syrup / Agave and stir

  • Heat your butter (or coconut oil) on the pan until melted then add to the mashed banana bowl and stir the mixture

  • Now add the bowl with the wheat flour etc to the runny banana mixture and stir

  • Add in the milk / water / yogurt and keep stirring

  • Chuck in the crushed walnuts and pumpkin seeds and stir some more

  • Keep stirring until the mixture is free-ish from lumps but it doesn't need to be smooth

  • Grease a baking tine (Bread loaf tin preferred) with some butter

  • Add in the Mixture - even out across the tin and put in the over for 50 minutes

  • Chop up the half banana and add the banana slices to the top of the mixture to decorate however you see fit

  • Once risen, and browned on the top, remove from the oven and the bread tin and allow to cool

  • Serve warm with butter and enjoy. Nom Nom
