Fabulous Fluffy American Pancakes Recipe

These fluffy little edible treats really are the breakfast of champions. They are so quick and easy to make and a real treat for a lazy weekend breakfast or brunch. Perfect if you just want to treat yo' self or if you need some inspiration for your breakfast / brunch menu.
They are delicious served with fresh fruit - blueberries, raspberries, strawberries, blackberries and cover in honey or maple syrup. If you want to really indulge you could go all out with streaky bacon and maple syrup.
Total Prep and Bake Time: 30 Minutes
Difficulty: Really Easy
Serves: 6 Pancakes (if you are making for four people then double the ingredients in the list below)
Ingredients:
- 140 grams plain white flour or all purpose flour - 1 tablespoon (large spoon) baking powder - 1 teaspoon (small spoon) of salt - 2 large tablespoons of caster sugar - 130 ml semi-skimmed milk - 1 large egg, beaten - 50 grams melted butter (or you could substitute for olive oil, plus extra for cooking)
Method:
- In a large bowl, add the flour, baking powder, sugar and salt
- beat the egg in a separate bowl
- melt the butter in a saucepan
- now add the milk, butter and beaten egg to the bowl of dry mixture and stir until smooth. (It should only take a few minutes to get a creamy consistency of the batter
- Using a non-stick frying pan over a medium heat melt some butter (or olive oil) then once hot, ladle out the batter onto the pan, making two circles of pancakes, or one if your pan is small.
- Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown and the pancake has risen to about 1 cm thick.
- Remove from the pan onto a plate and repeat until the batter has been used
- Serve with Fresh Fruit and Maple Syrup (on the side or otherwise)
