Indulgent Gooey Double Chocolate Chip Cookie Recipe

Quite possibly one of the most indulgent sweet treat recipes out there but absolutely worth it once in a while. This is a must have recipe for anyone's repertoire as they are so quick and easy to produce and who doesn't love a cookie now and then!
Difficulty: Easy
Time: 30 minutes
Ingredients:
300 grams Plain or All-Purpose Flour
150 grams white granulated sugar
100 grams light brown sugar
1 Teaspoon of baking powder
1 Teaspoon of salt
1 Teaspoon Bicarbonate of soda
2 Teaspoons vanilla extract
2 Large Eggs
200 grams salted butter (softened / room temperature)
100 grams chocolate bar cut into rough chunks (Dark or Milk Chocolate)
100 grams chocolate chips (Dark or Milk Chocolate) use the opposite of the above - i.e dark chocolate chips and milk chocolate chunks or vise versa
Method:
Pre-heat the oven to 180 degrees C
cut the chocolate bar into rough chunks and set to the side
Add the flour, baking powder, bicarb and salt to a large glass mixing bowl
Whisk the eggs in a separate bowl and add the vanilla extract
In a kitchen aid, magic mix or food processor, mix the butter, and two types of sugar until combined
Now add in the egg mixture and the bowl of flour etc and mix until combined into a cookie dough
Remove the cookie dough from the kitchen aid and add back into the glass bowl
Now add in the chocolate chips and chocolate bar and mix in to the dough until evenly spread. You can mix with your hands or a wooden spoon but it is much easier to mix with your hands, just adding flour if it gets sticky
Now remove the cookie dough from the glass bowl and place on a large clean surface which has been sprinkled with flour
Roll the dough into a cookie log, about 5cm in diameter thick (give or take)

Now with a sharp knife, cut the cookie dough into segments (about 3 cm thick) and place on the baking tray (which has been covered with baking paper)
I like to cut the segments and then roll each into a ball with my hands before fattening onto the baking tray but if you are happy with how your segments look - just mold them into a cookie type shape

Put the cookies in the over for about 8-10 minutes until they are just starting to go brown - remember we want them nice and gooey so be careful not to over bake
Remove from the oven and baking tray - if you are transporting your cookies then leave them to set before you box them up, but I think they are the best served still warm, with the chocolate melted and a cup of tea or milk to wash them down.
