One rare upside to this global Corona Virus Pandemic is finding we have some time on our hands (even if we are just cutting out our commute time time to and from the office) to focus on some of the things we truly enjoy - or if you want to just try something new. I fancy myself as a bit of a dab hand in the kitchen and I am a bit of a clumsy baker so I though why not use the time now to polish up my baking skills. It is always useful to have a few basic go-to recipes in case of emergency. Not quite there is no bread left in the world emergency, but this time has also encouraged me to become more self sufficient. I would like to make more of my own breads from scratch and I am loving the variations in healthy / not so healthy muffins that really are quite easy to whip up - anyone can do it! It is time to put on your apron, grab that rolling pin, and overcome your culinary fears.
In no particular order, these are my top ten go to lockdown recipes. Practical, Healthyish and relatively easy. Click on the links to take you through to the baking instructions.

A perfect healthy alternative made with wholewheat flour and lost of goodness. Slice and freeze, then pop in the toaster or under the grill to defrost. Delicious served warm with butter.
Light, Fluffy and Delicious and a great alternative to chocolate chip muffins. Great for a spring / summer bake as they are sunny and citrusy.
Please believe it doesn't get much better than this. A little taste of home, Irish Wheaten Bread is such a versatile little loaf - it can be served sweet with butter and jam, savory to accompany hearty soups or stews in the winter months or with cream cheese and salmon with afternoon tea - but my favourite of all - served freshly baked and smothered in salted butter.
I find this recipe slightly technical but hails from the culinary queen herself - Nigella Lawson.
This is a great recipe for a birthday cake, a special occasion or a #bakeoff challenge.

A perfect healthy snack and great for freezing - I threw in some pumpkin seeds too just to add to the taste and texture.
Another traditional Irish favourite of mine - inspired by my local bakery, I tried to recreate this little gem myself. Not quite bakery standards yet but with a bit of practice I think I'll nail it. This is a sweet bread, perfect served with butter . jam or on its own for supper or afternoon tea.
I think this recipe strikes the perfect balance between healthy and indulgent and they look great too. This little muffin mix is a real crowd pleaser.
This dark majestic bread is just a delight. I used to look forward to it at the breakfast buffet during my business trips to Dublin, but now that all travel has ceased I decided to try and recreate the specialty myself. I think it tastes pretty great even if I do say so myself.
